Seasonal weather trend: a coolish spring and hot, quite dry summer; August was very hot and allowed the grapes to ripen fast and furious.
Drying: on the vine after pinching of the petiole by hand.
Fermentation: in steel at 18 °C, with inoculated yeasts.
Ageing: in barrique for at least 12 months.

Pairings: Perfect with marbled cheeses or to close a meal with fancy biscuits.

Moscatello Passito Secolo IX: Intense golden hues. Dried apricot, dried figs and citron on the nose with toasty hints. A rich, lingering yet fresh palate, not at all cloying.

Seasonal weather trend: a coolish spring and summer struggling to get started, with temperatures never too high; ripening was slow and gradual, with significant day-night temperature ranges that meant the grapes built up excellent levels of aromatic substances.
Fermentation: in steel at 16 °C, with inoculated yeasts.
Ageing: in steel for six months.

Pairings: The perfect wine to serve with seafood appetizers, raw or steamed shellfish, and delicate fish recipes; also a good partner for vegetarian cuisine.

Fonte Grotta Moscato Bianco Secco Colline pescaresi IGT: a white sparkling wine for Thailand market with brilliant straw yellow with golden nuances. Peach and apricot on the nose with floral notes and tropical hints. Soft, fresh, vibrant drinkability.

Organolectic test: Sangiovese becomes a wine of intense ruby to bright carnet in color, dry and warm in flavor, lightly tannic with great structure and aromatic lenght. Its aroma and also evolves, becoming intense with ageing, complex and variegated, ranging from spiece to woo, from tobacco to forrest fruits.

Combinations: This wine goes especially well with red meats, roast game, charcoal grilled meats and strong cheese such as Parmesan, tuscan sheep cheese (pecorino etc.). It also gets well with many lamb, caneton a’ la presse (duck). We advice you to open the bottle several hours before serving and to drink at a temperature between 18 and 20 degrees C.
