Seasonal weather trend: a coolish spring and hot, quite dry summer; August was very hot and allowed the grapes to ripen fast and furious.
Drying: on the vine after pinching of the petiole by hand.
Fermentation: in steel at 18 °C, with inoculated yeasts.
Ageing: in barrique for at least 12 months.
Analytical data: ABV 13.5%; sugars 115 g/l; total acidity 6 g/l; pH 3.30
Pairings: Perfect with marbled cheeses or to close a meal with fancy biscuits.
Serving temperature: 10–12 °C

Moscatello Passito Secolo IX: Intense golden hues. Dried apricot, dried figs and citron on the nose with toasty hints. A rich, lingering yet fresh palate, not at all cloying.
